    Immersion Blender Mayonnaise

    This is like magic. I needed to make some mayonnaise and didn’t feel like cleaning my blender. So I wondered if anyone made mayo with an immersion blender. I found some advice online and this was the site with the most positive comments. I gave it a try and I’m a complete convert. Everything goes into a jar at the same time. You hit the button and within SECONDS you have mayonnaise. You have a couple of things to wash, and your mayonnaise is in a jar already!

    List of Ingredients




    1 large egg
    1 T. lemon juice or vinegar (sherry vinegar is great)
    1/2 t. Dijon mustard
    3/4 t. kosher salt
    1/4 t. ground white pepper
    1 C. light olive oil (or vegetable oil)

    Recipe



    Use a jar or cylindrical container that will fit the blender head and allow the ingredients to expand slightly. Add all of the ingredients to the jar. Let sit for a couple of minutes so that the oil floats on top.

    Put the blender into the jar and sit it firmly on the bottom. Keeping the blender on the bottom of the container, turn it on high. Don’t tilt it or lift. Within seconds the mayonnaise will begin to form and creep up the sides of the jar a bit. Once you have mostly mayonnaise in the jar with just a bit of oil on top, you can move the blender up and down a little to incorporated the oil.
    Keep refrigerated and discard after a week.

    Makes about 1 1/2 cups.
