Lovely, easy hollandaise! I always keep my hollandaise warm in a Thermos – an Alton Brown trick.
List of Ingredients
3 egg yolks
1/4 t. Dijon mustard
1 T. lemon juice
1 dash hot pepper sauce
1/2 c. butter, melted and heated in the microwave about 1 minute
Recipe
Place the yolks, mustard, lemon juice and hot pepper sauce in the Vitamix. Cover and select Variable 1. Turn on and increase speed to Variable 4. Blend for 15 seconds.
Increase the speed to Variable 5 and take the lid plug off. Drizzle in the melted, hot butter slowly until it thickens (happens VERY quickly).
Makes about 1 cup.
