Recipe Introduction
This is a great vinegary sauce for NC bbq'd pork. I had great success cooking pork butt on our gas grill on indirect heat with hickory woodchips for hours. This sauce and "Momma's Slaw" went perfectly with it.
List of Ingredients
- 3 medium onions - chopped
- 1 1/2 c. celery - chopped
- 5 T. butter
- 6 T. brown sugar (I used brown Sugar Twin)
- 1 2/3 c. catsup
- 12 T. worchestershire sauce
- 3 c. cider vinegar
- 3 t. molasses
- 3 T. dry mustard
- 1/2 t. red pepper flakes
Instructions
- Saute onions and celery in butter until soft. Add rest of ingredients and simmer 30 minutes. Strain and cool.
Final Comments
Makes about 3 cups.
