Marlene’s Rib and Chicken Mop

Recipe Introduction
This is a wonderful sauce. I used it on ribs and they were just delicious. The flavors are just perfectly balanced – slightly sweet, slightly spicy with interesting flavor notes from the spices.
List of Ingredients
2 Tbs powdered ancho, poblano or New Mexican chilies
1 Tbs ground black pepper
1 Tbs dry mustard
1 tsp ground coriander
1 tsp ground allspice
1/4 tsp ground cloves
1/2 tsp grated nutmeg
up to 1 tsp cayenne (adjust to taste) [I used 1/4 t.)
1/4 cup neutral flavoured oil (such as canola)
1 onion finely chopped
6 cloves garlic finely chopped
1 shallot minced
1/2 cup lightly packed brown sugar
1 cup white vinegar
1/2 cup clover honey
1/4 cup Worcestershire sauce or Soy sauce (I use 1/2 and 1/2)
1 tsp smoked salt (optional) [I used bacon salt]
1 32oz bottle ketchup
Recipe
Mix all the spices together and leave for later.
Heat oil over medium heat in a large pot, and sauté the onion, garlic and shallot until soft.
Add the spices and mix thoroughly - about 3 minutes.
Add the remaining ingredients and simmer for 30 minutes.
DON'T COOK TOO LONG or at too high a heat, you'll end up with a crystallized mess.
You can use a hand blender if you prefer a smooth sauce.
Makes about 3 pints.
FOR THE RIBS: Cut this sauce 1/2 & 1/2 with honey to glaze ribs.
