    Recipe Introduction


    Good basic cheese sauce and an important ingredient in Judy's Eggs Benedict Casserole (soon to appear). As with every single cheese or egg dish I make, I always add a couple of dashes of Tabasco.


    List of Ingredients


    • 1/4 c. butter
    • 1/4 c. flour
    • 1/2 t. salt
    • 1/8 t. nutmeg
    • 2 1/2 c. milk
    • 1 1/2 c. shredded gruyere or baby swiss
    • 1/2 c. shredded cheddar


    Instructions


    1. Make a medium roux with the flour, butter, salt and nutmeg.
    2. Slowly add milk, stirring constantly. Bring to a boil. Remove from heat and add cheeses, stirring to melt.
