Mornay Sauce

Recipe Introduction
Good basic cheese sauce and an important ingredient in Judy's Eggs Benedict Casserole (soon to appear). As with every single cheese or egg dish I make, I always add a couple of dashes of Tabasco.
List of Ingredients
- 1/4 c. butter
- 1/4 c. flour
- 1/2 t. salt
- 1/8 t. nutmeg
- 2 1/2 c. milk
- 1 1/2 c. shredded gruyere or baby swiss
- 1/2 c. shredded cheddar
Instructions
- Make a medium roux with the flour, butter, salt and nutmeg.
- Slowly add milk, stirring constantly. Bring to a boil. Remove from heat and add cheeses, stirring to melt.
