Rico's Pineapple Salsa

Like Rico, I served this unusual and delicious salsa with shrimp quesadillas. It was so easy to put together and the flavors are so fresh and bright. The only change that I made was to use a roasted jalapeno - I blackened it on the grill and removed the skin, seeds and ribs. I can't tolerate the heat of a raw jalapeno and find that this softens the heat, but retains the flavor. I used a whole jalapeno.
List of Ingredients
1/2 Cup seeded and diced tomatoes
1/2 cup finely diced golden pineapple
1/4 cup minced red onion
1 tablespoon minced fresh cilantro leaves
1 teaspoon minced jalapeno, or to taste
1 tablespoon fresh lime juice
1 tablespoon fresh orange juice
Salt to taste

Mix it all up in a bowl. Give it a couple hours to chill in the fridge.
