Skip's Gorgonzola Steak Sauce

This lovely, rich sauce is just fantastic on steak. You could add some sautéed mushrooms to it, too.
List of Ingredients
Pan drippings from cooking steak
1/2 C. beef stock or wine [I used port]
4 oz. cream
4 oz. Gorgonzola
Freshly ground black pepperRecipe
After you have removed the steak from the pan, over medium heat, deglaze with the beef stock or wine, stirring up all the cooked bits. Add the cream and cheese and stir to melt the cheese - do not boil. Season to taste with the pepper.
