    Coconut "Rice" (Orzo)

    Recipe Introduction


    Since Jessica and I can't eat rice, due to the gastric bypass surgery, but can eat orzo, I am always searching for ways to substitute orzo for rice. I've never had coconut rice, so I'm not sure what it's supposed to taste like. This was a little bland. I think that next time, I will add more cinnamon and maybe some toasted coconut. I served it with Grilled Five-Spice Chicken.

    List of Ingredients




    Orzo - equal to 8 servings
    1 T. sweet butter
    1 (13 - 14 oz.) can unsweetened coconut milk
    1 1/2 c. water
    1 (3") cinnamon stick
    1/2 t. salt

    Recipe



    Melt butter in a medium saucepan and saute orzo about 3 minutes.

    Add most of the coconut milk and the rest of the ingredients. Simmer, uncovered, until the orzo is cooked, stirring often. Drain and remove the cinnamon stick. Stir in the remaining coconut milk and fluff with a fork. Serve immediately or cool, stirring often and reheat to serve.

    Serves 8.
