    Recipe Introduction


    This is another great make ahead dish. It's very easy and everyone loves it. It goes great with grilled meat, poultry or fish.


    List of Ingredients


    • 1 packet couscous
    • 1/4 c. toasted pine nuts
    • 1/2 English cucumber - seeded and chopped (leave the peel on)
    • 1/2 c. tomato - chopped (out of season, I use the grape tomatoes)
    • 1/4 c. Greek olives - chopped
    • 3 green onions - minced
    • 1/2 c. feta cheese
    • olive oil and lemon juice - to taste
    • salt and freshly ground pepper - to taste


    Instructions


    1. Prepare the couscous according to directions. Add the rest of the ingredients. Toss well. Refrigerate for at least 2 hours.


    Final Comments


    Serves 4-6.
