Couscous Salad

Recipe Introduction
This is another great make ahead dish. It's very easy and everyone loves it. It goes great with grilled meat, poultry or fish.
List of Ingredients
- 1 packet couscous
- 1/4 c. toasted pine nuts
- 1/2 English cucumber - seeded and chopped (leave the peel on)
- 1/2 c. tomato - chopped (out of season, I use the grape tomatoes)
- 1/4 c. Greek olives - chopped
- 3 green onions - minced
- 1/2 c. feta cheese
- olive oil and lemon juice - to taste
- salt and freshly ground pepper - to taste
Instructions
- Prepare the couscous according to directions. Add the rest of the ingredients. Toss well. Refrigerate for at least 2 hours.
Final Comments
Serves 4-6.
