Fried "Rice" (Orzo)
Source of Recipe
My own invention
Recipe Introduction
I love fried rice, but since having the gastric bypass, neither Jessica nor I can eat it with any degree of comfort. Since we can tolerate orzo (me more than Jess), I have been experimenting with substituting orzo for rice. This works very well and tastes great. You can put anything you like in the dish - just like regular fried rice. I just prefer the shrimp and pork mixture.
List of Ingredients
Orzo, cooked and cold
Onion, chopped
1 egg, scrambled flat like an omlette and diced
Green onion, sliced
Peas
Small shrimp
Leftover roast pork, chopped
Mung bean sprouts
Ground ginger
Pepper
Soy sauce
Peanut oil
Recipe
In a large saute pan or wok, heat the oil over medium-high heat. Saute the onion until translucent. Add the green onion, peas, shrimp, pork, ginger and pepper. Saute until hot. Add the sprouts and saute a couple of minutes. Remove from pan and set aside.
Add more oil to pan, if necessary and stir fry the orzo until hot. Add soy, the egg and the other ingredients and stir fry until heat through. Taste and adjust seasonings.
