These are so easy and simple and they make great grits. They also make great grits cakes. I wanted a base to serve beef bourgignon on. What I did was to make the grits, as directed and then I spread them in a sheet pan. I cooled them in the fridge and cut them into diamond shapes. I heated them on a griddle to get the grill marks and then refrigerated them until just before I served them. I just nuked them in the microwave until hot. They heated up beautifully with no loss of texture or flavor.
List of Ingredients
12 rounded T. Quaker Quick Grits
3 1/2 c. water
1 t. paprika or smoked paprika
pinch cayenne pepper or pepper sauce, to taste
1 t. salt, or to taste
2 T. butter
8 oz. grated cheese [I used Cheddar]
Recipe
The grits will take a total of about 5 minutes to cook, from the time the water comes to a boil.
Bring the water to a boil in a medium saucepan (do yourself a favor and use non-stick). Stir the grits in. Lower the temperature to a simmer and keep stirring for the first minute of cooking.
At four minutes to go stir in the paprika and cayenne or hot sauce. At three minutes to go stir in the salt. At two minutes to go stir in the butter. At one minute to go stir in the grated cheese. When the grits have cooked a total of 5 minutes, cover and let sit for 5 minutes.
Serves 6-8.
