Leah’s Crackers

Recipe Introduction
Leah found this recipe somewhere and sent it to me. I did not have much luck with it. Though I should say that they did taste better the day after I made them. It just didn’t come together very well and I couldn’t roll it out as thin as it should have been. They were hard rather than crispy, and it was difficult to get them cooked all the way through without burning. I used Everything seasoning rather than just sesame seeds. If you just use seeds, I would add some salt. Even with the seasoning, we thought it needed more salt. Even though this was not terribly satisfying, I’m posting the recipe for future reference. The name on the recipe card that Leah sent me a picture of was Cecy Phillips Yerton.
List of Ingredients
1 c. flour
1 c. small curd cottage cheese
1/4 c. cold butter
1/4 c. sesame seeds
Recipe
Heat oven to 350F. Cut the butter into the flour [I grated it into the flour]. Mix in the cottage cheese and seeds thoroughly.
Roll out the dough very thin (do about 1/4 of the dough at a time) on a well-floured board. Cut into shapes and place on a parchment lined baking sheet. Dock with a fork and bake 15-20 minutes, until crisp and browned.
