Barrett's Veal/Pork Stew

Recipe Introduction
This is meant to be cooked in a clay pot. It would be good in a regular covered casserole, just not delectable and divine.
List of Ingredients
- Enough veal or pork tenderloin for 4
- 2 medium tomatoes - chopped
- 1 green pepper - sliced
- 2 small onions - sliced thin
- 3 cloves garlic - minced
- 2 carrots - sliced
- 1 c. chicken broth
- 2 t. tomato paste
- white wine
Instructions
- Put meat into clay pot.
- Toss in everything else but the last three.
- Mix tomato paste into broth. Pour over meat.
- Splash liberally with wine.
- Cover and cook at 450 degrees for 1 1/2 hour. OR if you are using a regular casserole: cover and cook at 350 degrees for 2 hours or until tender.
Final Comments
Really good with egg noodles.
