    Barrett's Veal/Pork Stew

    Recipe Introduction


    This is meant to be cooked in a clay pot. It would be good in a regular covered casserole, just not delectable and divine.


    List of Ingredients


    • Enough veal or pork tenderloin for 4
    • 2 medium tomatoes - chopped
    • 1 green pepper - sliced
    • 2 small onions - sliced thin
    • 3 cloves garlic - minced
    • 2 carrots - sliced
    • 1 c. chicken broth
    • 2 t. tomato paste
    • white wine


    Instructions


    1. Put meat into clay pot.
    2. Toss in everything else but the last three.
    3. Mix tomato paste into broth. Pour over meat.
    4. Splash liberally with wine.
    5. Cover and cook at 450 degrees for 1 1/2 hour. OR if you are using a regular casserole: cover and cook at 350 degrees for 2 hours or until tender.


    Final Comments


    Really good with egg noodles.
