Bomo's Chuckwagon Stew

List of Ingredients
- 1 t. sugar
- 1/4 c. flour
- 1 c. red wine
- 2 lb. stew beef in 1" cubes
- 2 T. shortening
- 2 t. salt
- 1/4 t. pepper
- 1 t. chili powder
- 1/4 t. thyme
- 1 bay leaf
- 1 T. Worchestershire sauce
- 1 t. Italian Seasoning
- large can of tomatoes - crushed
- 1 can beef broth
- 6 small potatoes - cubed
- 6 carrots - sliced
- 1 1/2 large onion - chopped
- 2 cloves garlic - minced
- 1 c. frozen peas
Instructions
- Mix sugar and flour. Coat beef with this and saute in shortening with the onion. Deglaze the pan with the wine.
- Add broth, tomatoes, seasonings and vegetables except for the peas.
- Cover. Bring almost to a boil. Reduce heat and simmer 1 1/2 - 2 hours.
- Add peas. Cook 15 more minutes.
Final Comments
This does just fine in a large crock pot.
