    Bomo's Chuckwagon Stew

    List of Ingredients


    • 1 t. sugar
    • 1/4 c. flour
    • 1 c. red wine
    • 2 lb. stew beef in 1" cubes
    • 2 T. shortening
    • 2 t. salt
    • 1/4 t. pepper
    • 1 t. chili powder
    • 1/4 t. thyme
    • 1 bay leaf
    • 1 T. Worchestershire sauce
    • 1 t. Italian Seasoning
    • large can of tomatoes - crushed
    • 1 can beef broth
    • 6 small potatoes - cubed
    • 6 carrots - sliced
    • 1 1/2 large onion - chopped
    • 2 cloves garlic - minced
    • 1 c. frozen peas


    Instructions


    1. Mix sugar and flour. Coat beef with this and saute in shortening with the onion. Deglaze the pan with the wine.

    2. Add broth, tomatoes, seasonings and vegetables except for the peas.

    3. Cover. Bring almost to a boil. Reduce heat and simmer 1 1/2 - 2 hours.

    4. Add peas. Cook 15 more minutes.



    Final Comments


    This does just fine in a large crock pot.

    Serves 6 - 8
