Brian's Tortilla Chicken Soup

My brother-in-law, Brian, makes this wonderful soup every Christmas when he comes home to Virginia from Arizona. My Mother-in-law, knowing that by the days after the holiday everyone in sick of "Turkey and..." instead has a multi-cultural spread with everything from ham biscuits to Pancit.
List of Ingredients
- 8 tomatoes
- 16 c. chicken broth
- 6-8 chicken breasts
- two bunches green onions
- 2 cloves of garlic, minced
- olive oil
- GARNISH:
- Corn tortillas cut in strips and fried until crisp in vegetable oil, and salted w/ onion salt
- avocado cut into chunks
- shredded Mexican cheese
- lime wedges
- chopped fresh cilantro
Instructions
- Blanch, peel and puree tomatoes and add to chicken broth in a large pot. Simmer chicken breasts in broth until cooked and tender. Remove from pot and cool slightly. Shred and return to broth.
- Saute chopped green onions and broth until tender and add to broth. Simmer for 30-45 minutes.
- To serve: add garnish ingredients (except tortilla strips) to bowl and top with broth and chicken (squeeze the lime wedges). Top with the tortilla strips.
Final Comments
This will serve 10-16 as an appetizer, and 8 as a main course.
