Mock Turtle Soup

Recipe Introduction
This is a very, very popular recipe in SE Indiana. It is seasonal, for some reason (when are Mock Turtles in season?), but I don't remember what the time of year it is traditionally served. It's kind of involved and is a good "group recipe", but very, very good!!!
List of Ingredients
- 2 lb. ground turkey
- 2 lb. ground beef
- 1 dozen small hard boiled eggs
- 1/2 qt. raw potatoes
- 3 medium onions
- 1 qt. carrots
- 1 1/2 stalks celery
- 2 - 15 oz. cans of tomato sauce
- keg of catsup
- jar of chili sauce
- 1/4 c. lemon juice
- 1 c. vinegar
- 1/2 of a 10 oz. bottle worchestershire sauce
- salt and pepper to taste
- 1 T. paprika
- 2 T. chili powder
- 1 T. allspice
- 1-2 T. cajun spice
- 1 c. flour
- 1 c. butter
Instructions
- Brown meats. Drain. Process fine - eggs, potatoes, onions, carrots and celery. Brown the vegetables and add to meat.
- Add all ingredients except for flour.
- Simmer 2 hours.
- Make a brown roux with flour and butter. Add to soup. Simmer very low 1 -2 hours.
Final Comments
This is even better the next day.
