    This was a very good soup. It was hard to figure out what was in it. Interesting and tasty!

    List of Ingredients




    2 Med. sized minced onions
    1 small green pepper minced
    1 Jalapeno pepper minced
    1/4 cup minced sun-dried tomatoes (optional)
    2 Tablespoons canola oil
    2 Tablespoons flour
    3 cups 1% milk
    3/4 cup reduced fat peanut butter
    3/4 teaspoon celery salt
    Pepper, to taste
    3 cups tomato juice

    Recipe



    In a 3 q. pan cook the onions and peppers in oil until soft and opaque. Add flour and stir a minute or two. Remove from heat.

    In a separate bowl stir milk slowly into the peanut butter until smooth. Add celery salt, pepper and sun-dried tomatoes. Stir the milk mixture into the pan with the sautéed onions and peppers. Return to medium heat and stir often until it thickens. Do not boil. Stir in tomato juice. Can be served hot or cold.

    Serves 6.
