    We got a big bunch of lemon balm in our first CSA basket and I didn’t know quite what to do with it all before it went all slimy. I thought that this was a good way to preserve it and will use the oil for salad dressings and to rub on chicken to roast.

    List of Ingredients




    1 c. oil
    1/2 c. chopped fresh lemon balm

    Recipe



    Add the lemon balm to the oil and let stand 4-5 days at room temperature. Strain the oil, discard the herb and put into a clean jar. Store in the refrigerator for up to 6 months.
