    This turned out so well. Tender and moist. I served it topped with Michael Ruhlman's Cognac and Cream sauce.

    Salt & Pepper

    Recipe



    Generously salt and pepper the meat and seal. SV at 130F for 3 hours. Remove from bag, dry and sear.
