Recipe Introduction
This turns thick, ordinary grocery store pork chops into truly tender, juicy chops. I've only ever done it with very thick chops - over one inch thick.
List of Ingredients
Pork chops - sealed in vacuum bag
Seasoning blend (I've used Penzey's BBQ and Ozark)
Sauce ingredients (see note below)Recipe
Sous vide the chops for 4 hours at 145F. Remove them from bag and save the jus for the sauce. See below.
NOTE ON SAUCES: For the BBQ seasoning, I caramelized onions, added bottled BBQ sauce and the jus from the bag.
For the Ozark seasoning, I sauteed some shallots and garlic, added some Dijon, cream, and the jus.
