Recipe Introduction
This is good, rich frosting. I think that it is really TOO rich for frosting an entire cake – it makes a great filling, though. You will need to double this recipe to frost a 2 or three layer cake. The original recipe called for coffee which a lot of chocolate recipes call for. They always say, “You won’t taste the coffee, it just makes things taste more intensely chocolate.” That is just not true with me – I always taste the coffee and it just ruins the chocolate for me! If you like coffee, by all means add 1 t. coffee granules with the heavy cream.
List of Ingredients
1 stick sweet butter
1 1/2 c. sugar
1 1/4 c. unsweetened cocoa powder
Pinch salt
1 1/4 c. heavy cream
1/4 c. sour cream
2 t. vanilla extract
Recipe
Melt butter in large saucepan.
Stir in sugar, cocoa and salt.
Combine cream and sour cream in bowl, mixing until smooth. Gradually add this mixture to the chocolate mixture and stir until blended. Cook until sugar dissolves, and mixture is smooth and hot to the touch. Do not boil.
Off the heat, add the vanilla. Cool icing to room temperature. Refrigerate overnight. Remove from refrigerator for an hour before frosting.
