    Kim's Fluffy White Chocolate Frosting

    Source of Recipe

    My own

    Recipe Introduction

I adapted this from my Fudgy Chocolate Buttercream Frosting and subbed a can of prepared frosting for the buttercream just to make things easier. It makes a really good, fluffy frosting that spreads beautifully and holds well without getting stiff or sticky. You can color this frosting.

    List of Ingredients

8 oz. white chocolate, finely chopped
8 T. sweet butter, cut into 4 pieces
    1 c. sweetened condensed milk
    1/4 c. light corn syrup
    1 t. vanilla
    Pinch of table salt

    1 can prepared white frosting

    Recipe

Melt chocolate and butter in microwave. Put into the bowl of a stand mixer. Add the condensed milk, corn syrup, vanilla and salt. Whip until well blended. Whip at high speed for a few seconds. Do this periodically until it cools and thickens. This will take as much as an hour to get it to the consistancy you need for a frosting.

When thick and cooled, mix in the canned frosting and the food coloring, if desired.

Make enough to frost and fill a 2-layer cake.
