    This is like Seven Minute Frosting, but MUCH easier – no double boiler, no thermometer. Gooey, glossy and good! I usually double this recipe if I am frosting a 2 layer cake, because I like the frosting thick, plus there is usually someone around who will lick the bowl for me!

    List of Ingredients




    1 c. sugar
    ¼ t. cream of tartar
    salt
    2 egg whites
    1 t. vanilla

    Recipe



    In a saucepan combine sugar, cream of tartar, 1/3 c. water and a dash of salt. Cook and stir until bubbly and sugar dissolves. In a mixer bowl combine egg whites and vanilla. Add sugar syrup VERY slowly to unbeaten egg whites while beating constantly at high speed of electric mixer about 7 minutes or until stiff peaks form.

    Frosts tops and sides of two 8 – 9” layer cakes.
