I made this for Easter 2020 to go on country ham biscuits. It was the perfect accompaniment and I think it would be great on lots of different breads or as a dip for soft pretzels. This recipe makes 4 cups, which seemed like a lot to have on hand, so I quartered it. That made for some odd measurements - halving would be easier and give you a more manageable amount.
6 cups diced peeled sweet potatoes
2 cups diced peeled tart apples
4 cups water
2/3 cup orange juice concentrate
1/2 cup packed dark brown sugar
1-1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/4 to 1/2 teaspoon ground cloves

Using a heavy saucepan, over medium heat, mix all the ingredients. Bring to a boil and lower the heat. Simmer uncovered for about 2 to 2 1/4 hours, stirring occasionally. The mixture should be thick and there should be about 1 cup of liquid remaining.
Cool slightly and blend in a food processor or blender until smooth – do it in batches, if necessary. Place mixture in jars or small containers. Refrigerate for at least 2 hours before using. Store refrigerated.
