    This method produces a nice, crispy skin and is no more work than my regular method of oiling the potatoes before cooking.

    List of Ingredients




    Salt
    4 (7- to 9-ounce) russet potatoes, unpeeled, each lightly pricked with fork in 6 places
    1 T. vegetable oil

    Recipe



    Heat oven to 450F. Dissolve 2 T. salt in 1/2 c. of warm water in a bowl. Toss the potatoes in the salted water and put on a rack over a baking sheet in the middle of the oven. Bake until the largest potato reaches 205F – 45 minutes to an hour.

    Brush the potatoes with oil and return to the oven for 10 more minutes.

    Remove the potatoes from the oven and immediately cut open to release steam and press ends to push the potato flesh up.
