Apple-Glazed Carrots

I didn’t have any apple jelly, so I used Golden Syrup instead. Mike loved these.
List of Ingredients
12 oz. Petite carrots
1/3 c. apple juice
2 t. apple jelly
1 t. Dijon mustard
Salt & pepper, to taste
Recipe
Put the carrots and apple juice in a small saucepan and bring to a boil over medium heat. Cover reduce heat and simmer until the carrots are tender (10-15 minutes). Remove cover and add mustard and jelly. Cook, stirring, over medium heat until the liquid evaporates, and the carrots are glazed. Add salt and pepper to taste.
Serves 2-3.
