    Baked Spinach with Three Cheeses

    My version of a Bon Appetit 2/97 recipe


    List of Ingredients


    • 1 c. finely chopped onion, sauteed in olive oil
    • 1/2 c. crumbled feta cheese
    • 1/2 c. grated Edam cheese
    • 1/4 c. crumbled Roquefort cheese
    • 2 T. fresh dill
    • 2 T. fresh bread crumbs
    • 1 egg yolk
    • 3 T. olive oil
    • 2 10 oz. pkg. ready to use spinach, coarsely chopped


    Instructions


    1. Preheat oven to 350 degrees. Lightly butter a 11x7x2" baking dish. Mix first 7 ingredients in a large bowl.

    2. Heat oil in large pot over med-high heat. Add spinach; saute until wilted and juices evaporate, about 3 minutes. Transfer spinach to strainer; drain well. Mix with cheese mixture and put in prepared dish. Bake until heated through, about 20 minutes.
