    Delicious and SO much easier than steaming and then cutting in half and sizzling in butter. It does stink up the house more, though!

    List of Ingredients




    1 1/2 pounds Brussels sprouts, trimmed and cut in half through the core
    4 ounces pancetta, 1/4-inch-diced
    1/4 cup good olive oil
    Kosher salt and freshly ground black pepper
    1 tablespoon syrupy balsamic vinegar

    Recipe



    Heat the oven to 400 degrees. Line a sheet pan with non-stick foil. Put the sprouts on the pan including the loose leaves (they get nice and crispy). Add the pancetta, olive oil, 1 1/2 teaspoons of salt and 1/2 teaspoon of pepper. Toss and spread out.

    Roast for 20 to 30 minutes, stirring after 10 minutes. They should be tender and browned and the pancetta should be nice and crisp. Remove from the oven and drizzle with the vinegar and stir again. Taste to adjust seasonings. Serve hot.

    Serves 6
