Bebo's Sweet Potatoes w/ Bourbon Syrup

Recipe Introduction
These are not EXACTLY Bebo's sweet potatoes, but they are certainly inspired by hers. I'm not at all sure that she used fresh potatoes and I know that she added the bourbon directly to the mixture. Jessica and I don't care for the flavor of bourbon, so a few years back, I hit upon the idea of making a bourbon simple syrup. Momma jokes that they always knew just how strong the sweet potatoes were going to be by how tipsy Bebo was when they arrived Christmas night! She gave herself a tot everytime she gave the potatoes one! This isn't exactly a recipe either - more general directions - I do this by taste.
List of Ingredients
POTATOES:
Baked sweet potatoes, hot (1 large per 2 people)
Butter
Brown sugar
Cinnamon
Maple syrup
Marshmallows
BOURBON SYRUP:
1 batch bourbon syrup, warmed
Recipe
Preheat oven to 350 degrees.
Mash or chunk the sweet potatoes. Add butter, brown sugar, cinnamon and maple syrup to taste. Put in casserole dish and bake until hot. Top with marshmallows and broil until browned - WATCH CLOSELY - these will burn black in a second!
Serve with warm syrup.
