Bruce’s Stir-Fried Vegetables
Source of Recipe
Adapted from a recipe by Bruce (C. sapidus) at eGullet.org
Recipe Introduction
Bruce made a wonderful sounding and delicious looking stir-fry to go with his Gai Yang (Roasted/Grilled Chicken), the recipe for which is in the Ethnic section. We loved the chicken and this stir-fry and thought that they made a great pair. Bruce uses mushrooms and fermented soybean paste, which I didn’t have. Soybean paste can be spicy, so I decided to add soy sauce instead. This is one of those ‘list of ingredient’ recipes – use the proportions that you like. I used equal amounts of snow peas, Napa cabbage and spouts.
List of Ingredients
Snow peas
Napa cabbage (chopped into 1x2-inch pieces)
Bean sprouts
Garlic, minced
Onions, chopped
Green onions, sliced
Fish sauce, to taste
Mirrin, to taste
Soy sauce, to taste
Black pepper, to taste
Oil
Recipe
Heat the oil in a large sauté pan or wok over medium-high heat. Sauté the snow peas and onions until almost done. Add the remaining ingredients and sauté, stirring, until done.
