    Caesar Roasted Potatoes

    Our friend, Stephanie, made these delicious potatoes when we visited them in Florida August 2015.

    List of Ingredients




    1 1/2 – 2 lb. baby Yukon potatoes
    1/2 c. Caesar dressing
    1/4 c. sliced green onions
    1/2 c. shredded Italian blend cheese*
    1/2 c. French-Fried onions (canned kind)

    Recipe



    Heat oven to 400 degrees. Place the potatoes in a microwavable bowl and cover. Microwave on high for 8-10 minutes. They should be tender when prodded with a fork. Halve each potato and place in a 13x9-inch baking pan. Bake for 15 minutes and remove from oven.

    Top with the Caesar dressing and green onions and toss well. Top with cheese and onions. Return to the oven for a few more minutes – until the cheese has melted.

    Serves 4-6.

    * Italian blend cheese includes Low Moisture Part Skim Mozzarella, Provolone, Parmesan, Fontina, Romano and Asiago Cheeses.
