Caramelized Cauliflower

Mike, my husband liked this a lot. I am less of a cauliflower fan (unless it is nice and cheesy-gooey in a casserole!), but I like it, too. Not at all watery, very sweet and tender. It took me almost twice as long as the recipe recommends to get it roasted properly, though.
List of Ingredients
- One head cauliflower, trimmed and washed
- Cooking grade extra virgin olive oil
- Good quality extra virgin olive oil
- Sea salt
- Fresh ground pepper
Instructions
- Preheat oven to 400 degrees.
- Cut the cauliflower into ¼” slices (some will break up a bit, that’s fine). Toss with a few T. of cooking grade extra virgin olive oil and spread in a single layer in a baking pan or cast iron skillet, and roast until it begins to brown a bit, about 15 minutes. Serve hot, sprinkled with good sea salt and freshly ground pepper and then drizzled with a bit of your best extra virgin olive oil.
