Caramelized Onions and Peas

Recipe Introduction
I was looking for an interesting way to serve peas and a co-worker, Cathy Sly, recommended this recipe. The original calls for green beans rather than peas, but she was sure that peas would work just as well. You can even do these partially in advance. Just do the onions, then cool, cover and refrigerate. When you are ready to cook the peas heat the onions in a microwave. I am not a pea fan, but everyone liked these very much and the onions were delicious!
List of Ingredients
1 bag frozen pearl onions, thawed
1 bag frozen peas
2 T. olive oil
1 T. sugar
1/2 t. salt
Freshly ground black pepper, to taste
Recipe
Blot the onions with a paper towel to dry. Heat the oil over medium-high heat in a 12-inch skillet. Sauté the onions, stirring often, for about 5 minutes, until starting to brown. Reduce the heat to medium-low, add the sugar, salt and pepper. Continue to cook, stirring often, for about 15 minutes - until the onions are deeply browned, soft and heated through.
Meanwhile, cook the peas according to the directions. When done, drain and toss with the onions until well mixed. Taste and adjust seasonings.
Serves 8.
