    Recipe Introduction


    I serve these every Christmas Eve. They are great for a crowd because they freeze very well and everyone loves them. I don't have an exact recipe. You have to taste as you go!


    List of Ingredients


    • 10 Baking potatoes, baked, split and scraped out while still hot
    • 1 lg. brick of reduced fat cream cheese, cubed
    • 1 sm. carton of reduced fat sour cream
    • chives
    • 1/2 stick of butter
    • salt and pepper to taste
    • 2 eggs
    • shredded Cheddar cheese - use good cheese, you'll be glad!


    Instructions


    1. Retain potato skins. Mash potatoes with the rest of ingredients. Taste and adjust. Stuff back into skins and freeze on a sheet pan. (Or you can put back into the oven and heat until hot through). Put in a freezer bag and store.
    2. To reheat, thaw in refrigerator and heat on sheet pan at 350 degrees for about 30 minutes. When they come out of the oven, top w/ additional shredded cheese.


    Final Comments


    Serves about 20.
