Cinnamon-Apple Sweet Potatoes

Fat free, low sugar, fast, easy and good!! I did this backwards – I microwaved the potatoes and cooked the sauce in a pan – even faster!
List of Ingredients
4 medium size sweet potatoes
1 ½ c. finely chopped cooking apples
½ c. orange juice
¼ c. sugar (I used Splenda)
1 ½ t. cornstarch
½ t. cinnamon
½ t. grated orange rind
Recipe
Preheat oven to 375 degrees.
Scrub potatoes; prick several times with a fork. Place them on a baking sheet, and bake for 1 hour or until done.
Combine chipped apple, orange juice, sugar, cornstarch, cinnamon, and orange rind in a 2 qt. baking dish.
Cover and microwave at HIGH 3 minutes; uncover.
Stir mixture, and microwave at HIGH 2 additional minutes or until sauce thickens. Serve over split baked sweet potatoes.
Serves 4.
