    Inspired by a recipe by Gina Neely on the Food Network.

    Recipe Introduction


    These are great collards – with a touch of spice and sweetness. Don’t forget that the 2 pounds of collards is after being cleaned and stripped of their hard stems. That amounted to two bunches for us.

    List of Ingredients




    2 lb. trimmed, washed and chopped collards
    6 c. salted water
    3 large smoked ham hocks
    1/2 c. sugar
    2 t. hot sauce
    Salt and pepper, to taste

    Recipe



    In a stock pot or Dutch oven bring the water to a simmer. Add the ham hocks and cover. Continue to simmer for 90 minutes, or until the hocks are slightly tender. Add the remaining ingredients and cover. Adjust heat so that the greens are at a low boil. Cook for 1 – 1 1/2 hours, or until the greens are tender. Season to taste with salt, pepper and hot sauce.

    Serves 8-10.
