    Do-Ahead Mashed Potatoes

    I am always looking for do-ahead dishes and we really liked these. They turn out very smooth and creamy and rich.

    List of Ingredients




    3 lb. medium potatoes
    3/4 cup milk
    1/2 cup whipping cream
    1/2 cup butter
    1 teaspoon salt
    1/8 teaspoon pepper

    Recipe



    Cut potatoes into large pieces (you can peel them before or after cooking). Steam, covered in 1-inch of water until tender and drain.

    Heat the milk, cream, butter, salt and pepper in a saucepan over medium-low heat until the butter is melted. Reserve one cup of this mixture, cover and refrigerate.

    Mash the potatoes, adding the remaining milk mixture in small amounts. You may not need all of the milk mixture. Whip the potatoes with an electric mixer until they are light and fluffy. Be careful not to overbeat the potatoes - they can get very gluey.

    Spray a 2-quart casserole with cooking spray and put the potatoes in the pan. Bake right away or cover and refrigerate up toe 24 hours.

    When ready to cook, preheat oven to 350 degrees. Pour the reserved milk mixture over the potato mixture. Bake uncovered for 40-45 minutes, or until hot. Just before serving, stir the potatoes.

    Serves 8
