Duvel’s Potato Pancakes

Duvel posted these on eGullet and I thought they looked perfect. I shredded mine in the Cusinart and I think they would be better grated on a grater across the short way. My strands were a little too long, I think. He calls for waxy potatoes, but all I had was russets. He suggested that I up the flour amount with a russet as they are more ‘wet’ than the waxy.
List of Ingredients
3 large waxy potatoes, grated
1 medium onion, grated
1 large egg
1 T. (or more) AP flour
1 t. Salt
1/2 t. Pepper
Pinch of nutmeg
Oil, butter, ghee, or tallow
Recipe
Mix the grated potatoes and onion with the egg and flour. Season. Scoop out portions onto a sheet pan lined with non-stick foil (my scooper hold 6 tablespoons) and pat down slightly to a patty shape. Let sit about 15 minutes to firm up, then fry at medium heat in your choice of fat. Brown on one side and flip to brown on the other.
Makes 6-8 depending on size of each pancake.
