Greens with Pot Likker

Recipe Introduction
Use whatever kind of greens you like with this recipe. I usually use a mix of turnip and collards.
List of Ingredients
- 6 c. water
- 1/4 lb. salt pork
- 1 lb. greens - rinsed VERY well and destemmed and torn into bite sized pieces
- 2 t. salt
- 1/2 t. white pepper
Instructions
- Put water and salt pork in a big, heavy pot with a lid and bring to a boil. Turn down, cover and simmer for 30 minutes.
- Add salt and pepper to the water and stir, then add greens, pushing them down into the simmering water with a spoon. When all the greens are in the pot, cover and simmer for an hour.
Final Comments
Serve with chopped fresh onion and CORNBREAD.
I do a couple of things differently: I cut the salt pork into pieces and saute them slowly for a few minutes before I add the water. And I think a few drops of hot sauce can't hurt.
Serves 4 - 6.
