Hash Brown Red Potatoes

Just a good, simple hash brown.
List of Ingredients
- 2 1/2 lb. medium red potatoes, cut in half
- salt and pepper
- 1 T. butter
- 1/2 c. chopped onion
Instructions
- Steam the potatoes 15 - 20 minutes. Cool and shred. Add salt and pepper to taste.
- Coat a large nonstick skillet with Pam and butter. Place over medium heat. Add onion, saute 5 minutes. Add potatoes, pressing into the skillet. Partially cover and cook 12 minutes, until brown on the bottom and thoroughly heated. Invert onto serving platter.
