Honey Glazed Carrots

The timing on roasting these will depend largely on how big your carrots are. I used some very small ones from Mike’s garden and they were actually over-cooked. So, keep an eye (and a testing fork) on them.

List of Ingredients
1/4 c. butter, melted
4 tbsp. honey
1/2 tsp. dried rosemary
Kosher salt
Freshly ground black pepper
2 lbs. carrots, peeled and halved lengthwise
Recipe
Heat oven to 450F. Line a baking sheet with non-stick foil or parchment paper. Mix the first 5 ingredients and pour over the carrots. Toss to coat and spread the carrots over the baking sheet. Roast until tender and caramelized.
Serves 6.
