Recipe Introduction
Jessica made these with chicken enchiladas and street corn for a dinner with our good friends and neighbors, Courtney and Melissa. Simple and really good.
List of Ingredients
3 cans of black beans, drained and rinsed
2 short cans of chopped green chiles
5 cloves of garlic, minced
2-3T of butter
3 T of chopped cilantro
12 ounces of no sodium added chicken stock
Recipe
Melt butter in a saucepan. Add the garlic and sauté until fragrant. Add the beans and chiles. Let cook for 5 minutes, then add stock. Let simmer for 20 minutes. Once at desired texture, remove from heat. Use a slotted spoon to serve, so as to drain off excess liquid.
Serves 12.
