I am very proud of these beans. I really wanted to make baked beans from scratch. I don’t care much for the mushiness that results from starting with canned beans and I’ve found most of the recipes for ‘Boston Baked Beans’ a little bland for my Southern taste buds. So I experimented some and this is what I came up with. They are really good. Mike and Momma loved them, too.
List of Ingredients
1 lb. navy beans
4 oz. side meat
2 oz. bacon
1 onion, chopped
2 garlic cloves, minced
3/4 c. catsup
1/2 c. BBQ sauce
3 T. Short Sugar’s BBQ sauce
2 t. Worcestershire sauce
2 t. yellow mustard
6 T. molasses
1 c. brown sugar
1t. chili powder
1t. cider vinegar
1 t. paprika
1 t. salt
1/2 t. pepper
A couple of dashes of hot sauce
Recipe
Do a quick soak by the method on the bag of beans. [You can certainly do a regular overnight soak if you prefer]. Drain the beans and cover again with water 4-inches over the level of the beans. Use a Dutch oven that will go into the oven. Bring to a boil, lower heat and simmer for 1 to 1 1/2 hours, or until just tender.
Retaining the cooking liquid, drain the beans and return to the Dutch oven. You are saving the cooking liquid in case the beans dry out during the oven baking. In my experience, this doesn’t happen, but better to be safe.
Heat the oven to 325 degrees. Just before the beans are tender, render down the side meat and bacon in a pan over medium-low heat. When the bacon is crisp and all the fat has rendered out remove the meat and add the onion and garlic and cook until translucent. Place the meat, onion and garlic in the pot with the beans.
Mix the remaining ingredients and stir into the beans – YOU MAY NOT NEED TO USE ALL OF THE SAUCE. Use your own judgment – they shouldn’t be overly soupy. Cover and bake for 1 hour. Remove the top after the first 30 minutes.
Serves 8-10.
NOTE: Short Sugar’s BBQ sauce is from a BBQ restaurant in Reidsville NC. Just omit if you don’t have any – there is no substitute.
