Oven Roasted Winter Vegetables

List of Ingredients
- 6 1/2 lb. mixed vegetables - potatoes, carrots, onions, yams, turnips, etc.- cut into 1" pieces
- 6 T. olive oil
- 30 unpeeled garlic cloves
- 1 T. dried sage
- 1 T. rosemary
Instructions
- Preheat oven to 450 degrees. Place 2 large cast iron skillets in oven to heat 15 minutes. Remove from oven.
- Add 1 T. oil to each skillet. Add half the vegetables, garlic and herbs to each pan. Drizzle 2 T. oil over vegetables and toss to coat. Season with salt and pepper. Roast vegetables until tender, stirring occasionally about 1 1/4 hours.
