    Recipe Introduction


    Good way to use leftover mashed potatoes. You can put these together ahead of time and refrigerate. Cook just before serving.


    List of Ingredients


    • 2 1/2 lb. potatoes - cooked and mashed
    • 1 2/3 c. grated cheese - any kind you like
    • 3 eggs - you'll use 1 egg + 2 yolks in the croquettes and 2 whites in the coating
    • 4 T. butter
    • 3 T. fresh parsley
    • 1 garlic clove - minced
    • flour
    • bread crumbs
    • oil for frying


    Instructions


    1. Add cheese, 1 egg, 2 yolks, butter, parsley, garlic, salt and pepper to taste to the hot mashed potatoes. Form into logs. Refrigerate for 10 - 15 minutes.
    2. Dredge logs in flour, dip into lightly beaten egg whites and then into bread crumbs.
    3. Heat oil (about 1/2") in skillet on medium heat. Fry croquettes until browned and hot through.

    These are good with everything and for some reason, people seem impressed??
