Potato Croquettes

Recipe Introduction
Good way to use leftover mashed potatoes. You can put these together ahead of time and refrigerate. Cook just before serving.
List of Ingredients
- 2 1/2 lb. potatoes - cooked and mashed
- 1 2/3 c. grated cheese - any kind you like
- 3 eggs - you'll use 1 egg + 2 yolks in the croquettes and 2 whites in the coating
- 4 T. butter
- 3 T. fresh parsley
- 1 garlic clove - minced
- flour
- bread crumbs
- oil for frying
Instructions
- Add cheese, 1 egg, 2 yolks, butter, parsley, garlic, salt and pepper to taste to the hot mashed potatoes. Form into logs. Refrigerate for 10 - 15 minutes.
- Dredge logs in flour, dip into lightly beaten egg whites and then into bread crumbs.
- Heat oil (about 1/2") in skillet on medium heat. Fry croquettes until browned and hot through.
