Potato “With Everything” Pancakes

Recipe Introduction
These taste wonderful and you can get them all ready except for the last minute frying the night before.
List of Ingredients
- 2 ¼ lb. potatoes, peeled and cut into 1” pieces
- 1 ½ c. grated cheddar cheese
- ¼ c. sweet butter
- ¼ c. sour cream
- 4 oz. Bacon, cooked crisp and crumbled
- 2 green onions, chopped
- ¾ t. salt and pepper
- vegetable oil
Instructions
- Boil the potatoes until tender. Drain and mash. Mix in all ingredients except for oil. Make into patties of 1/3 c. each. Place on wax paper. Refrigerate 1 hour or overnight.
- Dust with flour and fry in very hot oil.

Serves 4.
