    Recipe Introduction


    These are great because you make them ahead and serve them room temperature. Perfect to plop on top of a grilled steak and baked potato.


    List of Ingredients


    • 2 large yellow onions - UNPEELED
    • 4 t. sweet butter + more for the baking dish
    • salt and pepper
    • 8 t. balsamic vinegar


    Instructions


    1. Preheat the oven to 350 degrees. Halve the unpeeled onions through the root and stem ends. Cut a thin slice off the rounded side of each half so that it will sit upright in a baking dish.
    2. Butter a baking dish just large enough to hold the onions; arrange the halves cut side up in the dish. Season with salt and pepper, then put a t. of butter on each half. Cover the dish tightly and bake until the onions are tender, about 50 minutes. Uncover and sprinkle each onion half with about 2 t. of vinegar; use a fork to spread the onion layers apart so that the vinegar can dribble down between the layers. Return the dish to the oven uncovered; bake 15 minutes. Set aside and let the onions cool to room temperature before serving in their skins.
