Roasted Balsamic Onion Wedges

These are different from the other roasted balsamic onions I have in that they are done in wedges rather than whole onions. The flavor is basically the same. But I like the wedges – they fall slightly apart and are a wonderful side dish or topping. I believe that they need longer cooking uncovered – I like it when they get slightly caramelized.
List of Ingredients
3 large white onions, peeled and quartered
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/4 cup balsamic vinegar
1/2 teaspoon sugar
Recipe
Heat the oven to 350 degrees.
Place the onions, olive oil, vinegar, sugar, salt and pepper in a large bowl and toss well. Place in a high-sided 9x13-inch baking pan. Cover with foil and bake for 25 minutes. Remove foil and toss again. Place back in the oven for another 25 minutes, or longer.
