    Roasted Beets w/ Goat Cheese

    I don't care for beets (they taste like dirt to me), but Mike likes them. He LOVED these. I could be polite and eat them like this if they were served to me at someone's home. So, if you like beets, these seem to be wonderful.

    List of Ingredients




    3 medium beets, washed and trimmed
    Olive oil
    Salt & Pepper
    4 T. goat cheese, or to taste

    Recipe



    Preheat oven to 375 degrees.

    Wrap the whole beets in foil and place in the oven on the middle rack. Roast until tender and easily pierced with a knife, about an hour. Remove from the oven and let cool a bit. Leave the oven on. Peel and cut into bite-sized pieces. Place in a baking dish, toss with a little oil and the salt and pepper. Dot with cheese and bake until hot and the cheese is melty.

    Serves 4.
