Roasted Beets with Balsamic Glaze

Mike loved these. I thought they tasted like beets. (Not a favorite). Incredibly easy - and good hot, cold or somewhere in between, so they are definitely make ahead possibilities. Don't worry if it takes a long time to get the beets tender, it's hard to overcook beets, they just get more and more caramelized. I substituted Splenda for the sugar and no one could tell the difference.
List of Ingredients
2 pounds red beets, medium sized, scrubbed clean, green tops removed
Olive oil
Salt
1/2 cup balsamic vinegar
2 teaspoons sugar
1 teaspoon grated orange zest + more for garnish
Freshly ground black pepper
Recipe
Preheat the oven to 400 degrees. Place the beets in an foil lined roasting pan, rub with oil and sprinkle with salt. Cover with more foil and roast for 1 - 2 hours. The roasting time will depend on the size and age of the beets. At one hour, test every 15 minutes with a fork. When they are tender, remove from the oven and cool slightly - until they can be handled.
Place the balsamic vinegar and sugar in a small pan on high heat. Boil until it reaches a syrupy consistancy. Remove from heat. Peel the beets and cut into bite-sized pieces. Mix with the vinegar mixture and the orange zest. Add salt and pepper to taste. Garnish with a little orange zest.
Serves 6 to 8.
